Treat Highlight: Fudgy Brownie Cookies

I'm not a huge brownie gal, but two-bite brownies were one of my favourite grocery store treats growing up. They were sweet and gooey, and their shape was less messy than a traditional sliced square brownie.


My hunt for a brownie cookie that was luscious, packed with chocolatey goodness and just sweet enough was on!


And then I found it: a recipe that is more melted-semi-sweet chocolate than anything else (and I mean by a LOT), is packed with mini chocolate chips that soften while baking, adding to the fudgyness, and a batter that is so brownie-like, it has to be frozen before it can even be scooped to hold its shape.



The best thing about these hybrid cookies is the crackly outside finish that is so light and flaky, replicating the perfect brownie top!


My step-mum, a true brownie aficionado, just kept saying, "Oh my god," as she tried one for the first time. These became a fast new favourite, even by family members who didn't usually go for chocolate, and I'm so happy to share them with you!
